Vegan GF Cheese Crackers


Finding savory vegan and GF recipes that actually taste good are quite the task for a busy mama! Alas, Cara from one of my favorite vegan and GF websites forkandbeans.com is making food restrictions a little easier one recipe at a time. Thanks Cara! Just had to share this one with a few minor modifications to simplify directions. Check out her site for many more just like this one!

Crunchy Vegan GF Cheese Crackers


3/4 c Bob’s Red Mill GF Flour
1/4 tsp xantham gum
1 c. Daiya vegan “cheese”
3 Tbs Soy Free Earth Balance butter, room temp
1/2 tsp salt
1 Tb ice water


Preheat the oven to 375 degrees.
Mix butter and cheese
Whisk dry ingredients a separate bowl
Add 1/2 the flour mixture at a time
Stir all ingredients with a rubber spatula
Knead into ball. Divide dough in half and keep 1/2 in fridge
Roll out other 1/2 of dough with a rolling pin between parchment paper
Roll thin (about 1/4″ or so).
With a tiny cookie cutter (you can buy them here or on amazon) cut out
shapes and transfer to parchment lined baking sheet
Take a stainless steel spatula and slowly and gently place each cracker on top of a
Sprinkle the tops with a little coarse salt.
Place the crackers on the baking sheet in the fridge for 10 minutes while you
repeat the same process for the other 1/2.
Bake 15-20 minutes until golden brown
