Vegan Cheese Cake

This healthy and delicious recipe was given to me by a neighbor and dear friend.   I make this one for Dryden’s birthday every year!  Whether you are living gluten free, vegan, or simply lactose intolerant,  you will want to have this one on file.  Happy Food Processing!

for the crust;
2 cups cashews
1/2 cups dates
1/4 cup dried coconut
process nuts and dates in food prcessor. sprinkle coconut onto bottom of 8 or 9 inch pan-press crust onto the coconut.

for the cheese
3 cups chopped cashews- soaked for at least 1 hour
3/4 cup lemon
3/4 cup honey
3/4 cup coconut oil
1 tsp vanilla
1/2 tsp sea salt
1/2 cup water
blend until smooth
pour mixture into crust. place into freezer until firm . then add the berry mix below

berry sauce;

2 cups berries
1/2 cup dates
process in food processer ( do not put in blender-seeds become like sand…)  place into freezer and put in fridge 30 minutes before serving.
